Surgical steel has nickel in it, so it will be attracted to magnets. The only thing that makes surgical steel "surgical" is that it is usually coated in some kind of smooth finish like chromium, which makes the steel easier to clean and sterilize. Otherwise, the steel itself is no different than your average stainless steel cookware.
