I only use cookware that is 100% stainless steel. I love mine. I have been told that Aluminum is not good for health issues, also if you use Aluminum foil, to put shinny side toward the food. The dull side is the side you don't want to touch it.

Clad cookware:

The one drawback with stainless steel is that it doesn't conduct heat well.  The solution to this is clad cookware.  A 3 ply constuction technique is used that involves sandwiching a layer of either aluminum or copper between 2 layers of stainless steel.  So look for 18/10 stainless steel pots and pans that have a layer of aluminum or copper sandwiched in the base.

You won't get the best at the cheapest price. Steer clear of really cheap stuff as it is usually false economy and simply won't last. Read the labels - I have seen stuff labelled "steel effect" on the markets.

I think it's actually polished aluminium. Look for stuff with a good, thick solid base, otherwise it will warp with the heat. Make sure that handles screw into the main body so that you can tighten them if they work loose. Handles attached by rivets are almost impossible to repair if they work loose.
